Most commonly purple, the spongy, absorbent fruit is used in several cuisines. Way back in the 1700s, early European versions of eggplant were smaller and yellow or white. They looked like goose or chicken eggs, which led to the name “eggplant.”

Eggplants do best when the soil is consistent soil moisture. Water regularly, especially when the plants are young so that they develop deep roots. Avoid overhead watering to prevent disease, but consider using mulch to keep soil moist, warm, and to keep weeds down.
